CRAZE FOR "MAJA DE MAIZE"

Christmas is the most celebrated month of the year. The whole family craze for desserts especially on Christmas and new year. Should stock more sweet desserts in the refrigerator and that what the children get crazy and excited during December holidays.

One best recommended is the Maja Blanca to synchorize the White Christmas:D.

Some mothers cook in their own style. But the original Maja blanca should taste without any flavor but pure "Maize" or commonly called corn.

Try this "Maja de Maize", Sure you will love it.

Ingredients:

  • 2-1/4 cups coconut thin milk
  • 2/3 cup cornstarch
  • 3/4 cup white sugar
  • 1 can cream style corn
  • 2 tbsps butter, room temperature
  • 1 cup yellow corn kernel (canned or fresh)
  • 1 cup of fresh stipped young coconut (buko)
  • 1/2 cup grated Cheeze for toppings - (to counter the sweet)
  • 1/2 cup of crushed roasted peanut - optional for toppings
  • 1/4 tsp vanilla (optional)


Procedure:

In a deep caserole, combine the 2-1/4 cups coconut thin milk and 2/3 cup cornstarch.Blend it until sugar is dissolved. add the corn or "maize" kernel with the young coconut. Place over medium-low fire. Continuously stir it until it thickens. put off from fire.

Don''t delay, add in the corn cream and butter. Place again the half thickened cornstarch back to the stove for some 2-3 minutes or until ideal thickness is observed, should continue stirring with ladle hitting deep down the bottom to avoid sticking of the pan.

Remove from stove. Drizzle the optional vanilla 1 teaspoon . Mix well. Pour in a molding bowls, about 1 and 1/2 inches deep, and sprinkle the grated cheeze on top. Store in room temperature until it cools. Cover, then, put inside the refrigerator.

Best served if it is cold.

Tips.

In making Maja, Corn and coconut tastes should prevail. Putting any fruits like pineapple bits, raisins or fruit glaze and others lose the original essence of the original maja due to its sour taste. Otherwise it would appear and tastes like fruit flavored gelatin.
